The Perfect Plate: Getting the pub classics right

A great pub meal doesn’t need to be complicated, but it does need to be good, every time.

At Harvest, we talk a lot about The Perfect Plate. It’s our approach to getting the fundamentals right across our pubs best-selling dishes, from the quality of the ingredients and how a plate is prepared, to how it looks when it lands on the table.

Because when someone orders a pub classic, they know what they want. A schnitty should be golden and crisp. The chips should be hot. The salad should be fresh. And it should be just as good on a busy Saturday night as it is on a Tuesday lunch.

That consistency doesn’t happen by accident.

Behind every plate are our chefs and pub teams working on the details: refining recipes, sourcing quality produce, setting clear standards and making sure those standards translate across the kitchen every service.

For Harvest’s Group Executive Chef, Michael Munro, The Perfect Plate is also about keeping things simple. Rather than overcomplicating a dish, the focus is on doing the things that matter well and making sure every element earns its place on the plate.

It’s one of the ways we bring The Harvest Way to life in our kitchens and continue raising the bar across our pubs.
